VINIFICATION

Once harvested by hand to small boxes and carefully selected, the grapes were gently pressed. The juice fermented with the wild yeasts at 225 liters old oak barrels. Nothing was added to the wine, apart from a small amount of SO2.

It was bottled without any finning or filtration in August 2017.
