VINIFICATION

Once harvested by hand to small boxes and carefully selected, the grapes were crushed and de-stemmed. Then fermented with the wild yeasts, at temperature controlled small stainless steel tanks. After 14 days skin contact the wine was racked to 225 liters old oak barrels, where aged for fourteen months.

Nothing was added to the wine, apart from a small amount of SO2.

It was bottled without any finning or filtration in June 2014.
